This is a picture of Ngobe ladies sorting the premium coffee and removing any beans with defects. They are very skilled at spotting them and these are beans that have already been sorted on shaking table to remove ones of lower and higher density.
This reminds me of pictures in museums back home of Victorian ladies sorting beans by hand. Still done by hand and still done by ladies.
