Green beans keep best without any contact with air. Especially moist air. Most farms do not vacuum pack their coffee because it is a relatively new technique and machinery to do it on a large scale is expensive. I know two producers who own machines in Boquete. Getting an invitation to use those machines not so easy.
However, for very small producers like me. Well, I don't care. I can do it by hand using a domestic vacuum cleaner. We set up a little production line in the garage. I had two workers with wheelbarrows taking the sacks from the deposito to the garage where I operated the vacuum!
Very much like the technique you can use to compress and store clothes. All done and my sacks of coffee are vacuum packed in the deposito. This is just one of many practical examples of how small scale can be much higher quality. Small really is beautiful sometimes.
