It was Alex's last meal here, he is heading back on the long journey to Baltimore tonight. We will miss Alex and hope he comes back soon.
We cooked a free range local chicken steamed with herbs and lemons from the farm - lemon grass and marjoram. Chayote, that the coffee planters had cut back today to make way for baby coffee plants, roasted with potatoes in olive oil, salt and rosemary from the farm. All this was enjoyed in front of a roaring fire on the terrace. We burned orange wood and fallen eucalyptus branches from the property that we have been drying over the last few months. We served the main course with a dry Chilean chardonnay wine.
We finished our meal with a local specialty coffee. The coffee was a medium roast of the old fashioned typica coffee varietal. The coffee is grown and roasted by a lady farmer whose family have been coffee farming for several generations in the Boquete Valley.
