Today, I have some of my bean for my morning coffee tomorrow. No better Christmas present for me, after a little less than a year of working towards roasting my own beans. They were medium roasted this afternoon generously by Finca Dos Jefes just up the hill from here (who also roast their own coffee) and need to rest for approx 24 hrs.
They will be ready for me to taste during the Kings College Cambridge Carol Service that should be playing on my internet radio around 10am Panama time, coffee time, here in Panama on Christmas Eve. It can not get more perfect than that.
It is really too early to properly cup. They were harvested in November and need to rest for 90 days. Proper cupping will be in late January/February. Basically, I can not wait though to get a first read on my coffee. The best Christmas present ever. Tomorrow, will post what I tasted.
